Is it just me or does everyone get tired of trying to figure out what’s for supper every night of the week? Why is it such a daunting task? Sometimes I think to myself, do we really need to eat? I mean I have at least two weeks stored up around my waist.

I wish I was more like my step-mom. She had it together when it came to meals. She planned them ahead of time and made shopping lists that reflected the menu. She clipped coupons and knew where all the sales were, just like a magical meal planning Jeanie. I wish I was that organized. I’ve tried meal planning and meal prepping. The problem with that is when it comes time for spaghetti on Thursday, I don’t want spaghetti, lol.

I’m more of the “walk to the freezer at a quarter to five, realize I don’t have anything that can be edible within the time frame I need it to be, so I grab yet another pound of hamburger, and improvise. I like one-dish meals! One dirty pan is plenty in my opinion. Over the years I have come up with a few pretty good mystery casseroles, and only a few have been inedible.

One favorite was enchilada casserole — that’s what I called it anyway. I had leftover taco meat and some stale tortilla chips, I broke up the chips on the bottom of an 8x10 casserole dish and poured a little enchilada sauce over them. Then I mixed in some corn and rice with the taco meat, layered that on top of the chips, and poured the rest of the enchilada sauce over the top. I baked it at 350º for 20 minutes, sprinkled some cheese over the top, and baked it for ten more minutes. It’s even better if you have a can of diced tomatoes and green chilies to add.

I might have to make that again soon. The problem with casseroles is that there is always a lot left over. If I freeze them for another time, I always forget about them and end up tossing them when they have freezer burn, or I just can’t tell what they are anymore.

It’s that time again when I need to figure out “what’s for supper.” Pray for rain, X’s & O’s.
